Pancake Details: ricotta, blueberry compote, maple syrup
Presentation: 5/5. Compote stains the pancakes. Simple elegance.
Toppings: 4/5. I kind of wish the syrup was on the side rather than pre-drizzled on top, but that's mostly because I like autonomy. I totally see why they serve it like this, the pancake really soaks up the syrup. Compote is a nice addition, I love blueberry pancakes.
Fluffiness: 3.5/5. Gets crispier as you move from the center of the pancake. Middle is soft and fluffy, but overall the pancake is not pillow soft. Edges are nice and crispy.
Moisture: 5/5. No notes.
Flavor: 5/5. Brown butter, not overly sweet even with the aforementioned syrup.
Texture: 3.5/5. I know people really love the crispness a skillet pancake a la Chez Ma Tante, but it's not my favorite pancake texture. I lean on the fluffy side, but I see the appeal of a crisp edge sort of breaking up the pancake monotony and it is inoffensive to me.
